Catfish Pie Recipe

Ingredients For Catfish Pie:

  • 1-2 lbs. of cubed catfish (cut your filet into strips)
  • 2 boxs of jiffy corn muffin mix
  • 2 eggs
  • 1 cup vegetable oil
  • 1 medium sized onion - chopped
  • salt / pepper (amount - add to your specific taste)
  • 1 small or medium skillet
  • 1 9"x13" cake pan



How To Prepare The Catfish Pie:

1) Pre-heat over to 350 degrees fahrenheit
2) Blend muffin mix and eggs together
3) Heat oil in skillet
4) Sear fish in hot oil for 1 min per side
5) Remove fish and drain excess oil from meat
6) Pour half muffin mix in cake pan (use spoon to spread equally)
7) Place fish on top of the mix, making sure that you place the pieces so that they are spread equally on the mix
8) Carefully pour remaining muffin mix over the fish cubes (spread and ensure all fish is covered)
9) Place in heated oven for 10 - 15 minutes longer than muffin mix says to bake.
10) Check mix with a toothpick for doneness. Once done allow to cool for about 10 minutes and serve.

Is that it? For some reason it seems that this catfish pie is missing something?... more ingredients possibly. What do you think?

I would think that maybe some chopped vegetables would sound good to add with the cubed catfish nuggets. Veggies like some carrots, celery and corn. Or use them to serve as a fish soup, stew or gravy.

I think that would be a hearty and tasty meal, especially for those cold evenings during the rainy days of winter...

Yep, I would add some home fries (diced hash browns) and maybe a few red pepper pieces for color. As it stands right now, you seem to have the 'corny fish'... like a corny dog, only with fish in a different format. But over all, it sounds good and I plan to give it a try.
