Ingredients for baked fillets

1 stick of real butter

4-6 pieces of toast
Old Bay seasoning, or Emeril's seafood seasoning to taste
any kind of fish fillets, 1-2 lbs depending how much breading you like

Instructions for cooking the baked fillets

Preheat oven or toaster oven to 375-400 degrees F.
Melt butter in cooking tray or on cookie sheet.
Put bread and old bay in food processor or in bag and crush until finely crumbed.
Put fish into butter and flip over onto cookie sheet or tray.
Sprinkle bread crumbs on top of fillets
Bake 10 to 12 minutes until fish flakes apart - takes less time in toaster oven, more time in regular oven.
Serve with lemon wedges or alone.

*My husband and all his friends love crappie this way.

Helpful tips for preparing baked fish fillets:

The fish fillets can be frozen before cooking, with the crumbs and butter already on. And the bread crumbs can also be made ahead and kept in an airtight container.
