Fish Recipe of the Month

Broiled Striped Bass With Tropical Fruit Salsa

Serves 4

4 striped bass fillets
1 cup tropical fruit in light syrup
1/2 red bell pepper
1/2 fennel bulb, cut into 1 inch strips
1 lime
1 teaspoon olive oil
1/4 teaspoon salt

1) Put the fillets in a zip loc plastic food storage bag. Pour in 1/3 cup of the the fruit syrup juice (not the fruit, just the syrup). Seal the bag and place it in the refrigerator to marinate for about 15 minutes.

2) Apply nonstick cooking spray to a broiler rack, and preheat broiler.

3) In a medium sized bowl, add the fruit, any remaining fruit syrup, bell pepper, fennel, oil, salt, a teaspoon of lime zest, and squeezed lime juice.

4) Broil the striped bass fillets about 5 inches from the fire for about 8 minutes or until done. Serve with the tropical fruit salsa.
