Fish Recipe of the Month

Barbecued Tilapia with Thyme

Serves 4

4 tilapia fillets
3 cloves of garlic, minced
3 lemons zested
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1 tablespoon of fresh thyme, finely chopped
1/4 cup olive oil

1) Rub the tilapia fillets on both sides with the garlic, lemon zest, pepper flakes, salt, thyme, and olive oil. Place in a plastic zip loc bag, or a covered plastic or glass baking dish and leave it in the refrigerator for up to 15 minutes.

2) Place 2 layers of heavy duty aluminum tin foil on top of the grill rack in a medium-hot charcoal barbecue pit. Place the fish in a single layer on the aluminum foil. Cover the lid and cook for about 8 minutes or until done when the fish flakes with a fork. Serve while warm with your choice of sides.
